Sabre and Dagger didn't have much impact on the fight. At one point, they were even a distraction for Shang-Chi as he had to turn his back on Wolverine to stop them from entering the fight, and he was only just able to turn back around in time to stop an attack from Logan.

... he temporarily paraylses one of the Thing's arms with a nerve strike. It was a suprise blow, as the Thing's attention was on someone else at the the time (a bit like when Mantis KOed Thor). Nevertheless, it's a good showing for a character with no superhuman powers, and a marked improvement over his previous tussle with the Thing back in Marvel Two-in-One.

Would think that someone like the Thing, Hulk, or Superman skin and body durability would prevent that from happening!

Yeah they can withstand decompression of space or direct hits from asteroids but a nerve hit renders them useless. In the comic book world all things are possible. That is one of the things that make them wonderful and yet maddening at times.

Not sure if Shang can take full credit for that strike, as Stark was shown making him some type of weapon/s in the previous issue, and in later Avengers issues, he was shown using both energised nunchucks and energised wrist bands.

... I think Shang probably can take credit for that strike after all. I wasn't sure, because Tony was shown making him some kind of weapon or weapons one issue earlier (we couldn't see exactly what he was making at the time), and when Shang fought Gorgon in a later issue, he was apparently wearing some type of energised wrist bands, which I assume were Tony's creations.






However, in-between those issues, there was another issue where he whipped out a pair of energised nunchucks. And that issue included a flashback to the scene where Stark was shown making something for him. So it appears that the nunchucks were the weapons being made there, and the wrist bands were presumably made some time later. As I said, I don't even know for sure that the wrist bands were made by Tony; I just assumed that, since he clearly made the nunchucks.
