If Peter reformed Doc Ock and company then why didn't Peter and Peter's memories change to reflect that? I mean they are from the same universes as their foes but their foes are from further back in time. So if they reform then the Peters' life history would immediately change? Doesn't make sense.

A new timeline would be spinned off because of what happened when they arrived reformed and not die or give up on their plans because of being reformed. So the Peters pulled in for this movie were from the original timelines established by the movies we know, they would go back to their own timeline where everything stayed the same... until they became a timeline variant themselves.
