The Greatest Batman Stories Ever Told vol. 1 a nice sampling of Batman stories from the 30s to the 80s. There is a volume 2 but it is Penguin and Catwoman centered since it was released when "Batman Returns" was out.

Batman: Strange Apparitions a clasic Batman run from the late 70s of DETECTIVE COMICS.

Batman: Tales of the Demon a tpb collecting many, if not all, of Batman's battles with Ra's Al Ghul.

Batman in the Seventies and Batman in the Eighties are two tpbs that give you some of the better stories about Batman in those decades. The series does also have volumes for the 40s, 50s, and 60s.
