I think in some, maybe even most, cases, changing the ethnicity doesn't matter.

But there are some characteristics of...well, characters that are arguably inseparable.

Daredevil is heavily rooted in being Catholic. Magneto not only being Jewish but specifically a survivor of the Holocaust. Punisher at least some sort of war veteran. In some cases, a characters race is indeed inseparable. Black Panther, Storm, Luke Cage (though you certainly could have a Power Man who isn't black, but Luke Cage's origin in being involved in an illegal experiment while in prison for a crime he didn't commit is unfortunately something that is a combination of experiences rooted in African-American history in the United States).

I think there are aspects of Peter Parker that are inspearable. But they relate more to his morality, his intelligence. Maybe even being a New Yorker (which was one of my favorite things of the disappointing ASM2, that Andrew Garfield adopted a New York accent for the role). But I don't see how his race is inseparable from his character.
